Pizza Night

In an effort to save money and cut our budget, we have stopped eating out. It wasn't as hard as we thought. We often would go out just out of exhaustion and laziness after work, etc. Well, one thing we have missed is ordering pizza so we decided to have homemade pizza night one night a week--usually Friday. Even though it is a little more work for us, we found we actually eat sooner this way and it is WAY better. A good friend of mine told me about a very unique pizza she had recently made. She started out being very skeptical of the idea but loved it! It was a roasted squash, with caramelized red onions, fontina cheese and pumpkin seeds pizza. Well, Ralph was skeptical too but we tried it Saturday night. It was fantastic! We halved and roasted the squash at 200 degrees while we were at the Gathering Saturday. It was perfect when we got home. We pureed that in the food processor and let it cool. We made our regular crust--the recipe we had called for a cornmeal crust, but we are rather fond of ours. :) I don't like red onions (or really onions in general) so we used regular onions and only a third of the recipe. We spread the squash on the pizza, added the onions, used mozzarella cheese (we didn't have fontina) and then scattered the toasted squash seeds on top. It was good! Even my skeptical husband enjoyed it! It was fun to have a gourmet pizza on a budget!
